Mango Overnight Oats

Overnight oats are a healthy, quick option for breakfast and quite filling... I usually make them when I know I have a busy day at work and might be having lunch late as they keep me full for few hours. The good thing about overnight oats is that they can keep well in the refrigerator for couple of days, so just serve them in small jars and keep them covered

Here are some substitutes that you can use instead of the typical overnight oats;

Muesli instead of Old-fashioned oats… Muesli is made with toasted old-fashioned oats, nuts and dried fruits.

Nut butter; Peanut, almond or cashew... they make the oats more creamy

Chia seeds ; in this recipe I added some .

Overnight oats are very easy to make, the only tricky part is to get the right amount of liquid consistency , some prefer it thick and creamy , I like it less consistent so I add more milk

Ingredients (for 2 Medium Jars)

- 3/4 Cup Gluten Free Old-Fashioned Oats (I use Bob’s RedMill)

- 1 ½ tbsp chia seeds

- 1 ½ tbsp almond butter (or any other nut butter)

- 1 cup almond milk (or any other non-dairy milk)

- 1 tsp Honey (or Maple Syrup)

- Dash cinnamon

- 1 Big Mango Sliced to be served on top

- Pecans to be served on top (or any other nuts )

How to Make them

1. In a bowl, combine all ingredients (except mango and the nuts)

2. Refrigerate overnight, when you want to serve them in a jar, you can either place the oats and then top them with the mango slices and nuts or you can alternate like I did in the picture so you have fruits in the middle and on top.

Enjoy !
