Chocolate Peanut Butter Chia Pudding
The combination of Chocolate and peanut or almond butter is my favorite and goes perfectly with chia seeds, doughnuts, cakes, muffins… everything! It’s just too good
I combined both chocolate and peanut butter to make this delicious chia pudding, which you can enjoy for breakfast or afternoon dessert. It’s Vegan, Gluten free and packed with protein. Perfect! isn’t it
There are two ways to do the chia seeds, either by blending them and it will be smooth so you will not feel the chia seeds and this would be ideal if you don’t like the texture, but if you like to make it layered and want to keep the chia texture, you can use a spoon to mix. It’s not complicated.
The layers are easy to make, as long as you keep the mix enough in the fridge until it becomes solid. I usually prepare each layer one night before, and in the morning I mix them in a jar and take them with me. For the topping, it’s really up to you, you can add some almonds, hazelnut, chocolate chips or maybe a fruit.
Ingredients (for 2 big servings )
Peanut or Almond Butter Layer
1 Cup Almond Milk
3 tbsp peanut or almond butter
1 tbsp Maple or Honey (if non vegan)
3 tbsp chia seeds
1 Cup Almond Milk
2 tbsp cocoa powder
1 tbsp peanut or Almond butter
½ tsp vanilla
You can add honey or maple syrup if you want it more sweet
1) Whisk together all the ingredients to make the peanut butter layer and set aside for around 10 minutes. (if you want it blended, transfer to blender to make it smooth .
2) in a separate bowl, whisk the chocolate layer ingredients and also set aside.
3) keep in the fridge both bowls for at least 2 hours (I usually keep them overnight)
4) transfer them to jars , putting each layer at a time then top it with any type of nuts you like.
