Carrot Cinnamon & Oat Cookies (Gluten, Dairy & Refined Sugar Free)

Nobody wants to live in a world with no cookies right ! Even if we are on diet, want to be healthy and reduce sweets, there will always be room for a cookie or two :) I don't often experiment with oats but this time i gave it a try as I wanted to make healthy cookies. Those carrot cinnamon ones are epic! They are free from refined sugar, allergy friendly as I made them gluten and dairy free, moist, chewy and healthy enough to have many of them... What else can you ask for !


Ingredients (for 12 to 15 cookies)


- 1 1/4 cup Rolled Oats (Gluten free or regular oats)

- 1/2 cup Coconut flour (you can also use all purpose flour)

- 2 tsp Baking Powder

- 2 tsp Cinnamon

- 1/4 tsp Nutmeg

- 2 tsp Vanilla

- 1/2 cup melted Coconut Oil

- 2 Eggs

- 1/2 cup Maple syrup

- 1/4 cup Coconut Sugar

- 1 cup shredded Carrots

- Walnuts (Optional)


Preparation


1) Preheat oven at 180 degree C and line baking sheet

2) Mix together the oats, flour, baking powder, cinnamon and nutmeg

3) Mix at medium speed eggs then add coconut sugar, maple syrup, coconut oil, vanilla

4) Add the dry ingredients to the wet ingredients and continue to mix

5) Fold in the carrots and walnuts (optional)

6) Place the batter in fridge for approximately 30 min

7) Scoop the dough by making round dollops and then press them to make them slightly flat

8) Bake for approximately 20 min
