4 Easy Cookies Recipe - Vegan , Gluten Free and Refined Sugar Free


Looking for easy and simple cookies recipes ... Here's my favorite 4 which are made with similar ingredients, no more than 8 in total for each recipe. They're simple, require 10 min only to prepare, vegan, gluten free , refined sugar free and do not need any egg replacement,

Oatmeal cookies, Chocolate with Pistachio, Almond Butter with chocolate and Coconut.

1) Oatmeal Cookies ;

Soft and Chewy , sweetened with coconut sugar, packed with rolled oats and dried coconut and cinnamon infused . They have such a wholesome vibe !


Recipe (for approx 16 cookies)

- 1 and 1/2 cup Gluten Free Rolled oats (or normal rolled oats)

- 1 cup gluten free all purpose flour (or normal all purpose flour)

- 1 cup desiccated coconut

- 1 tbsp baking powder

- 1 tsp Cinnamon

- 1 cup coconut sugar

- 2 tbsp Maple Syrup

- 1 tsp Vanilla

- 1 tbsp non dairy milk (I used coconut)

- 1/3 cup coconut oil melted (you can also use 1/2 cup vegan butter)


Preparation

1) Add the rolled oats, Flour, Cinnamon, Baking powder and mix together

2) Cream the coconut oil (or vegan butter) with coconut sugar using electric mixer then add vanilla and maple syrup

3) Mix the dry ingredients (Flour) into the wet ingredients by hand. No need for electric mixer. You will get a crumbly mixture.

4) Add the coconut milk. It should by now roll like a ball and be non sticky. if it's still too crumbly, add a bit more milk until it's sticky enough to roll like a ball.

5) Roll into round balls on parchment lined baking tray (like picture below)

6) Put in the fridge for at least 20 min . In the meantime preheat the oven to 180 degrees

7) Take out from fridge, press in the middle to make the ball a bit flat (not a lot) then bake for approximately 20 min (for chewy and soft) and 5 more min if you like it crunchy,

8) Transfer to cooling rack to cool completely.


2) Almond Butter Cookies with chocolate Drizzle

Those are my favorite :) ... You can make them with almond or peanut butter , do not miss the chocolate drizzle on top, it's heavenly !

This is an 8 ingredients recipe and the topping is just one ingredient ; melted vegan chocolate.

The only tricky point in making those cookies is the type of almond butter you use. I only bake with fresh almond butter. If you are using the commercial brand, your cookies might turn out more oily than the ones I made so you might need more non dairy milk to make the dough "wet" enough to roll into balls.



Recipe for approx 20 cookies

- 1 and 1/2 cup all purpose flour (gluten free or normal)

- 1 tbsp baking powder

- 1 cup coconut sugar

- 1/3 cup coconut oil (or 1/2 cup vegan butter)

- 1 cup almond butter

- 1 tbsp Vanilla

- 1 tbsp non dairy milk (I used Coconut)

- Chocolate chips (to make the drizzle)


Preparation

1) Cream the coconut oil (or vegan butter) with coconut sugar using electric mixer then add vanilla and Almond butter

3) Add the flour and baking powder and mix with your hands. It will be crumbly.

4) Add the coconut milk. It should by now roll like a ball and be non sticky. If it's still too crumbly, add a bit more milk until it's sticky enough to roll like a ball.

5) Roll into round balls on parchment lined baking tray (like picture below)

6) Put in the fridge for at least 20 min . In the meantime preheat the oven to 180 degrees

3) Chocolate cookies with Pistachios

Delicious, satisfies chocolate cravings, crunchy , soft and very easy to make. I topped it with pistachios but you can alternatively top it with any nut of your choice or chocolate chips.



Recipe for approximately 16 cookies

- 1 Cup Gluten free flour (or normal all purpose flour)

- 1 tbsp baking powder

- 2/3 cup cocoa powder

- 1 cup coconut sugar

- 1 tbsp vanilla essence

- 1 tbsp non dairy milk

- 1/3 coconut oil (or 1/2 cup vegan butter)

- pistachios or other nuts for topping


Preparation

1) Cream the coconut oil (or vegan butter) with coconut sugar using electric mixer then add vanilla

2) Add the flour, cocoa powder and baking powder and mix with your hands. It will be crumbly.

3) Add the coconut milk. It should by now roll like a ball and be non sticky. If it's still too crumbly, add a bit more milk until it's sticky enough to roll like a ball.

4) Roll into round balls on parchment lined baking tray (like picture below)

5) Put in the fridge for at least 20 min . In the meantime preheat the oven to 180 degrees

4) Coconut Cookies

Soft and moist, packed with coconut flavor and texture


Recipe for approximately 16 cookies

- 1 and 1/3 cup desiccated coconut

- 1 cup coconut sugar

- 1 tbsp vanilla essence

- 2 tbsp non dairy milk

- 1/3 coconut oil (or 1/2 cup vegan butter)

1) Cream the coconut oil (or vegan butter) with coconut sugar using electric mixer then add vanilla
